Recipe: Homemade Eggrolls

While we all love a good eggroll from the Chinese restaurant, it isn’t always convenient or cost efficient. So, we decided to make our own. We wanted something simple to make and also quick and affordable.

Ingredients:
1 lb ground turkey, ground beef, or ground chicken
2 packages shredded cabbage or cole slaw mix
1 package eggroll wrappers (frequently found in the refrigerated produce section)

Oil for cooking
Bowl of water

Instructions:
1. Cook the ground meat. Sauté the shredded cabbage or cole slaw mix in a large skillet or saute pan until translucent. Sesame oil is a good choice sautéing.

2. After cooking, wipe out the pan and set to the side.

3. Mix meat and cabbage together in a bowl.

4. Place the eggroll wrapper on a dry countertop or cutting board with the corner facing you. Take about 1 - 2 spoonfuls of the mix and place on the eggroll wrapper. Fold the back corner in toward the middle. Then fold the 2 side in to the middle.

5. Using your fingers or a brush, paint the side and corner with water. Tightly finish rolling the eggroll. The water will help the edges seal.

6. Heat the oil in the skillet to cook the eggrolls. Place eggrolls down slowly in pan.

7. Cook each side until golden brown, turning throughout cooking.

Enjoy by themselves or with fried rice on the side. Serve with hoisin sauce or sweet chili sauce for dipping.
