Snowball Cookies

These walnut snowball cookies are a requested favorite every holiday season. We usually end up making multiple batches because they disappear so fast.

While these do require a little more time than some other cookies, they are also a less sugary dessert making them a nice balance to other sweets.

Ingredients:

  • 1 cup all purpose flour

  • 1 1/2 cups finely chopped walnuts

  • 2 Tbsp sugar

  • 1 tsp vanilla extract

  • 1/4 pound room temperature butter

  • Pinch of salt

  • Powdered sugar (as needed to roll the cookies in)

Instructions

Preheat the oven to 300 degrees.

Chop the walnuts. A food processor is good for this. You want them very fine.

Place all the dry ingredients together in a mixing bowl and stir together. I use my stand mixer for all the mixing) Add the vanilla extract. Cut the butter into small pieces and add. Continue mixing until the ingredients form a course meal texture. It will appear crumbly.

Using your hands, roll the dough into small balls and place on a cookie sheet, spaced apart.

Bake for 35 minutes.

Once the cookies have cooled, roll in powdered sugar. You may want to dust them a second time once they are fully cool. Store in a cookie tin or airtight container.
