Recipe: Homemade Ice Cream Cake

A dessert that we used to make for our kids for birthdays when they were little was a homemade ice cream cake. While you can buy them at Dairy Queen, Carvel, Culvers, Baskin Robbins and lots of grocery stores, we love the fun of making our own homemade ice cream cake with custom flavors and filled.

We customize the flavors to match what the kids wanted. We like to be unique by using cookie dough or oreo or other fun flavors of ice cream. Sometimes, we will start with vanilla ice cream and then add in custom flavors such as coffee or caramel for a truly unique ice cream cake.

In the summertime, you could have fun with layering fruit flavored ice cream or frozen yogurt with assorted berries and lemon cookies. A banana split ice cream cake is also a winner. The ideas and combinations are truly endless.

Ingredients:

  • 2 half gallon containers of ice cream. You can use any flavors

  • 1 jar hot fudge

  • fillers - cookies, cake, pretzels, etc

  • optional - whipped cream or heavy whipping cream for whipped cream frosting

Directions:

  1. Line a round cake pan with plastic wrap. Soften one carton of ice cream and place in a round cake pan. Freeze until solid. Remove from pan and wrap in plastic wrap. Return to the freezer until needed.

  2. Repeat step 1 for the second container of ice cream.

Assembly:

  1. Place the first layer of ice cream on a plate or flat tray.

  2. Cover with half the hot fudge.

  3. Add fillers such as cake, cookies, or pretzels.

  4. Add the remaining hot fudge.

  5. Place the second layer of ice cream on top.

  6. Finish with whipped cream if desired.

Cover with plastic wrap and store in the freezer until ready to serve.
